CHICKEN CLUB TACOS
Ingredients
2 Chicken breasts cooked and diced
1 Cup Shredded lettuce
6 8" tortillas
1 cup Shredded cheddar cheese
1 cup crumbled cooked bacon
Ranch dressing
How to Prepare:
Spread thin layer of lettuce over a tortilla, add diced chicken breast, cheese and cooked bacon pieces and small amount of ranch dressing.
Makes 6 tacos. You can add the ingredients to suit your taste.
CAMPERS STEW
Ingredients:
ground beef
potatos
carrots
ketchup(optinal)
any other vegtible(s) you may like
tinfoil
campfire
How to Prepare:
Take a piece of tinfoil and lay it out. Take some ground beef, break it up and lay it on the tinfoil. Cut up some potatos and lay them on the tinfoil. Add the carrots to the tinfoil. Finally add any other veggis. Fold the tinfoil up and lay it a campfire. Cook until the beef is fully cooked through unfold and add ketchup if you like. Enjoy the Campers Stew.
CAMPING BEANS
Ingredients:
1/2 lb. ground beef
1/2 lb. bacon
one onion, diced
3/4 c. brown sugar
1/2 c. ketchup
1 t. mustard
1-16 oz. can pork & beans
1-16 oz can great northern beans
How to Prepare:
Cook ground beef and drain. Cook bacon and drain. Mix together all ingredients. Simmer at least 30 minutes. The longer you simmer, the tastier it is! Check often so the liquid does not all cook out.
This is great as a side dish or a quick meal! I usually make this ahead of time so I just need to heat it up while we are camping
BARBEQUED PORK
Ingredients:
1 lb Pork tenderloin
2 tb Honey
3 tb Light soy sauce
2 tb Hoisin sauce
2 tb Catsup
1 ts Dark soy sauce
1 tb Sherry
1 Clove garlic; mashed
1 tb Sugar
How to Prepare:
Trim meat and cut into strips about 2" wide and 6" long. Combine remaining ingredients in bowl; pour over pork and marinate 2+ hours. Skewer pork with steel hangers and hang onto top rack of oven over shallow roasting pan containing a few inches of water.
Preheat oven to 425 for 10 minutes. Roast pork 20 minutes. With baster, coat with drippings every 5 minutes. Reduce heat to 325 and roast 5 minutes more. Slice each strip diagonally against the grain into 1/4" pieces. Serve cold. Dip with Chinese hot mustard and sesame seeds.
CAMPING FRENCH TOAST
Ingredients:
1 Apple
4 Reg. Hamburger Rolls
3 Eggs
1/8 Cup Vegitable Oil
2 Tbsp Milk
Cinnamon Powder
Pancake Syrup
How to Prepare:
Peel the apple and slice into thin pieces. In a bowl mix eggs with milk to make an egg wash. Break the hamburger rolls into small chunks and place them in the egg wash. Mix the roll pieces thoroughly in the wash so that the egg wash is soaked up. Pour roll chunks into a hot skillet containing the veg. oil. Add apple slices. Cook for 3 to 5 minutes until done. Sprinkle cinnamon over it and add syrup to taste!
BEEF NACHO DIP
Ingredients:
1 lb ground beef
1 onion
1 jar picante sauce (dip)
1 jar cheese dip
1 small container sour cream
salt/pepper to taste
nacho chips
How to Prepare:
Chop onion and saute in a pan.Brown ground beef ,drain and add picante sauce with a little water.Cook down.Add cheese dip, salt and pepper. Incorporate.Lastly add sour cream and incorporate.Put in bowls and dip chips to eat,
CAMP BURGERS
Ingredients:
2 lb. Hamburger
12 oz. Tomato Sauce
1 Diced Onion
Pepper
1 Diced Green Bell Pepper
One Box "Cheeseburger Helper"
Water
Salt
How to Prepare:
Brown Hamburger in skillet and add salt and pepper. Drain grease. Add in one diced onion and bell pepper. Then add in tomato sauce and 8 oz. of water. Add Macaroni and Sauce Mix from Hamburger Helper box. Simmer until macaroni is tender
